γ-谷氨酰键的水解

这种溶酶体或分泌的硫醇依赖性肽酶,在酸性pH值下最活跃。

在人类中,γ-谷氨酰水解酶由GGH基因编码。[7][9][10]该基因通过去除γ联聚谷氨酸和谷氨酸来催化叶酰聚-γ-谷氨酸和抗叶酰聚-γ-谷氨酸的水解。[10]
